della Valpolicella
Amarone della Valpolicella Classico DOCG
Our Amarone Acinatico comes from the selection of grapes which grow high up in the hills of Valpolicella. It’s a red wine with a great structure, elegant complexity and a really warm and spicy bouquet with raisin fruit flavor. It requires a period of drying the grapes and a long aging in barrels.
Oenological
practice
The grapes are selected hand by hand in September, placed in trunks and left to rest in our fruit-room. During the drying period, a sequence of biochemical processes, as Botritis Nobile, partially transform sugars into glycerine.
After crushing the grapes, the maceration fermentation processes let the wine be a very structured and incredibly aromatic wine. 2 years of ageing in oak barrels give a distinctive personality to Amarone Acinatico.
